My parents lovingly refer to this dish as “leftover topping pizza,” but I enjoy it because it’s hearty and my kids actually eat it. It allows me to sneak in extra veggies and transform it into a healthier meal without any fuss.

The best part? My kids love helping out—adding their favorite toppings, arranging the veggies into fun shapes, and making it their own. It’s not just a meal; it’s a fun, wholesome family activity that encourages healthy eating habits and creativity.

Hearty Veggie & Ham Pizza Recipe:

Ingredients:

  • Store-bought pizza dough (Trader Joe’s) or pita bread or tortilla
  • Pizza sauce of your choice
  • Mozzarella cheese, shredded
  • Sliced sandwich ham, chopped
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • Optional: Bacon, chopped
  • 1 tomato, chopped
  • 1 bowl full of broccoli florets, cooked (microwave in a bowl of water for 7 minutes)
  • 1 sweet potato, cooked (microwave until tender, then diced)
  • Optional: Fresh spinach leaves

Instructions:

  1. Preheat the Oven:
    • Follow the instructions on your pizza dough packaging for the oven temperature, typically around 425°F.
  2. Prepare the Toppings:
    • In a skillet over medium heat, cook the chopped ham, bacon (if using), sliced peppers, and onions until the vegetables are tender and bacon is crispy.
    • Microwave broccoli in a bowl of water for 7 minutes until tender. Drain and set aside.
    • Cook the sweet potato in the microwave until soft (about 5-7 minutes). Let it cool slightly, then dice.
  3. Assemble the Pizza:
    • Drizzle Avocado Oil (or Olive Oil) on the baking sheet. Roll out the store-bought dough and then transfer on a baking sheet. Poke holes all over dough with a fork. OR lay pita bread or tortilla flat.
    • Spread an even layer of pizza sauce.
    • Sprinkle a generous amount of mozzarella cheese.
    • Evenly distribute the cooked ham, peppers, onions, bacon, chopped tomato, broccoli, sweet potato, and optional spinach over the cheese.
  4. Bake:
    • Place the pizza in the preheated oven.
    • Bake according to the pizza dough instructions, usually 10-15 minutes, or until the crust is golden and the cheese is bubbly and melted.
  5. Serve:

• • Remove from the oven, let cool slightly, slice, and enjoy your hearty, veggie-packed pizza!
